1.1 Definition and scope of study

Confectionery is a product that primarily consists of sugar, and to which flavours and colours are added. It is presented in various forms and textures (jelly beans, lollipops, chewing gum, etc.), and appeal to both children and adults.

The market is experiencing structural difficulties which have been causing a drop in sales for several years now. New health concerns around food from the French are gradually diverting the population away from confectionery, which is often considered too sweet and chemical. Indeed, the market in France is shrinking, albeit at a low pace.

The major manufacturers have chosen to adapt by developing healthier products (such as less sweetened) and by pooling resources. The last few years have been favourable for the mergers and acquisition industry, including for example the creation of Carambar.

Smaller manufacturers (e.g. Kubli), on the other hand, rely on traditional products, targeting older customers, or through the appeal of regional products.
