1.1 Definición y alcance del estudio

El aceite de coco es un aceite vegetal comestible que se obtiene de la albúmina fresca de los cocos maduros. En 2020, el aceite de coco fue el 8ᵉ aceite vegetal más producido del mundo.

La popularidad del aceite de coco se debe a sus beneficios para la salud, ya que ayuda a reducir el nivel de colesterol "malo" en el organismo. Tiene muchos usos diferentes en la cocina (aceite vegetal, suplemento dietético), en la cosmética (cuidado de la piel, cuidado del cabello) o en la industria farmacéutica.

Existen dos tipos de aceites vegetales: los aceites vírgenes y los aceites refinados (copra). La diferencia radica en la forma en que se extraen. También hay aceites de coco vírgenes y vírgenes extra, siendo estos últimos más caros. Sin embargo, no existe una norma clara que defina la diferencia entre ambos.

El aceite de coco ecológico es el que se ha producido sin utilizar productos químicos ni pesticidas para cultivar los cocos.

Los cocos se producen principalmente en el este de Asia, como Indonesia, y los países europeos son los principales consumidores de aceite de coco, 5 de los países que más importan aceite de coco están en Europa en 2020, estando Francia en el puesto 9ᵉ de los importadores.

Los cocoteros no pueden crecer en la Francia continental por razones climáticas, por lo que la producción francesa procede de los DOM TOM, sobre todo de Reunión, Martinica y Guayana, pero esta producción sigue siendo escasa, lo que obliga a Francia a importar aceites en grandes cantidades. En 2019 y 2020 la cantidad de aceite importado se estabilizó tras un crecimiento del 38% respecto a 2018, con más de la mitad de las importaciones procedentes de Filipinas en 2020

Los beneficios para la salud del aceite de coco han sido controvertidos, así como el impacto medioambiental de su producción, pero el aceite de coco ecológico sigue siendo un producto que encaja perfectamente con las tendencias actuales de los productos ecológicos y naturales.
