Demand for hazelnuts in France: The French market is worth around 33,000 tonnes.

Direct consumption in the form of snacks accounts for 10% of the total, and indirect consumption, particularly in spreads, for 90%.

The global hazelnut market is worth around $2.8 billion, with production exceeding 1.1 million tonnes.

Turkey dominates world production at 67.2%. But production for the Turkish market is sensitive to the vagaries of nature, as demonstrated by the significant drop in Turkish hazelnut production following frost episodes.

Europe is the world's largest consumer of hazelnuts.

Despite a leading market position, French production managed by Unicoque faces challenges and is striving to develop with an organic segment showing 19% growth in spread consumption by 2020.

The organic trend is influencing the market and pushing producers towards more sustainable practices.

Hazelnuts occupy a prominent place in French gastronomy, largely thanks to their use in popular spreads such as Nutella, which accounts for the consumption of around 11,000 tonnes of hazelnuts a year. More than half the population regularly consumes Nutella.

In France, overall consumption of nuts and seeds has fallen by around 13%. However, consumption of hazelnuts rose slightly by around 4%. Consumers prefer large hazelnuts, consumed directly, and small hazelnuts, mainly sold shelled on the market.

There are between 5 and 6 million hazelnut consumers in France, each consuming an average of just over half a kilo a year.

The appeal of hazelnuts goes hand in hand with the growing trend towards "healthy snacking". Consumer preferences are increasingly moving towards organic and sustainable products.

French production varies from 10,000 to 15,000 tonnes, depending on climatic conditions. The Nouvelle-Aquitaine region is a major producer of hazelnuts in France.

1.1 Definition and scope of the study

The hazelnut is an oleaginous seed belonging to the nut family. Originating in Turkey, which is largely the world's leading producer, the hazelnut is used mainly in gastronomy, and more specifically in spreads. There are two main families of French hazelnuts:

  • Large hazelnuts (fertile coutard, corabel, ennis) for direct consumption, dried and/or roasted
  • Small hazelnuts (segorbe, pauetet) often reserved for the shelled market

The global hazelnut market witnessed a strong growth in 2019, as it is estimated to grow at a rate of 33.3% over 2018.

Turkish domination of the hazelnut market is both a threat and an opportunity for French producers, who have been active since the 1970s in Aquitaine. In fact, hazelnuts are very sensitive to weather conditions and a major frost episode in 2014 reduced the Turkish harvest by 40%, leaving room for other players

Although Turkish production has recovered its former level, some competition is starting to appear. Knowing that the South-West of France has an ideal climate for the cultivation of hazelnuts and given that Europe is the largest consumer in the world, France has a real card to play in this quasi-monopolistic market.

The French hazelnut production market is mainly based on one major player, Unicoque, which accounts for almost 95% of production.

As with much of the agricultural sector, organic supply is also making inroads into the hazelnut market in France, as organic spreads grew by 19% in 2020 compared to 2019, with hazelnuts being the main raw material for spreads
