1.1 Definizione e ambito dello studio

La nocciola è un seme oleoso appartenente alla famiglia delle noci. Originaria della Turchia, che è in gran parte il primo produttore mondiale, la nocciola è utilizzata soprattutto in gastronomia, e più precisamente nelle creme da spalmare. Ci sono due famiglie principali di nocciole francesi:

  • Nocciole grandi (coutard fertile, corabel, ennis) per il consumo diretto, essiccate e/o tostate
  • Piccole nocciole (segorbe, pauetet) spesso riservate al mercato sgusciato

Il mercato globale delle nocciole è cresciuto fortemente nel 2019, con un tasso di crescita stimato del 33,3% rispetto al 2018.

La dominazione turca del mercato delle nocciole è sia una minaccia che un'opportunità per i produttori francesi, che sono attivi dagli anni '70 in Aquitania. Infatti, le nocciole sono molto sensibili alle condizioni meteorologiche e un grave episodio di gelo nel 2014 ha ridotto il raccolto turco del 40%, lasciando spazio ad altri attori

Anche se la produzione turca è tornata al suo livello precedente, comincia ad apparire una certa concorrenza. Dato che il sud-ovest della Francia ha un clima ideale per la coltivazione delle nocciole e che l'Europa è il più grande consumatore mondiale, la Francia ha una vera carta da giocare in questo mercato quasi-monopolistico.

Il mercato francese della produzione di nocciole si basa principalmente su un attore principale, Unicoque, che rappresenta quasi il 95% della produzione.

Come in gran parte del settore agricolo, l'offerta biologica si sta facendo strada anche nel mercato delle nocciole in Francia, con una crescita del 19% nel 2020 rispetto al 2019, con le nocciole come principale materia prima per le creme
