1.1 INTRODUZIONE

Il latte è un liquido biologico commestibile di colore generalmente biancastro, prodotto dalle ghiandole mammarie di mammiferi femmine. Al contrario, il metodo latte vegetale è una bevanda prodotta da piante in sostituzione del latte animale: visivamente, il latte vegetale è simile al latte tradizionale, mentre in termini di gusto e nutrizione, il latte vegetale a volte differisce notevolmente dal latte tradizionale. Nell'Unione europea, le denominazioni commerciali basate sulla parola "latte" sono vietate quando si riferiscono a latte vegetale.

Esistono diversi tipi di latte vegetale che possono essere segmentati come segue:

  • Il latti di "frutta a guscio" e/o semi oleosi come il latte di mandorla, il latte di arachidi, il latte di nocciola o il latte di girasole;
  • Il latti di legumi colture proteiche come il latte di soia, il latte di piselli o il latte di lupino;
  • Il latte di cereali come il latte di avena, il latte di frumento, il latte d'orzo o il latte di segale;
  • Il latte pseudocereale come il latte di quinoa e il latte di grano saraceno;
  • Il latte proveniente da altre piante come il latte di cocco, il latte di sesamo o il latte di castagne.

Il latte vegetale viene consumato per diversi motivi in Francia: l'impatto del latte sulla salute (intolleranza o allergia al latte, problemi legati al consumo di proteine animali), la scelta di una dieta vegana o vegetariana, l'etica legata all'opposizione allo sfruttamento degli animali, la religione o per motivi ambientali o climatici.

Il mercato tradizionale francese del latte è diviso tra agricoltori, produttori e distributori, questi ultimi, spesso giganti del settore agroalimentare, che hanno il più forte potere contrattuale. Per conquistare quote di mercato, i giganti del latte hanno raccolto la sfida dell'internazionalizzazione, scommettendo sulla forte crescita della domanda in Cina (dove gli scandali sanitari che hanno colpito il settore locale hanno avvantaggiato il latte francese), ma anche sul mercato francese latte vegetale come Danone, che intende proporre di proporre di nuove gamme di yogurt al latte e vegetali .

Per alcuni, evitare i prodotti lattiero-caseari è diventato uno stile di vita tradizionale, con marchi quali Alpro , Sojasun e Bjorg . In futuro i sostituti del latte dovrebbero attirare un numero sempre maggiore di consumatori che si allontanano principalmente dal latte vaccino tradizionale a favore di un latte più sano e a base vegetale.
