1.1 Definición y alcance del estudio

La avellana es una semilla oleaginosa perteneciente a la familia de los frutos secos. Originaria de Turquía, que es en gran medida el primer productor mundial, la avellana se utiliza principalmente en la gastronomía, y más concretamente en las cremas para untar. Existen dos grandes familias de avellanas francesas:

  • Avellanas grandes (coutard fértil, corabel, ennis) para consumo directo, secas y/o tostadas
  • Avellanas pequeñas (segorbe, pauetet) a menudo reservadas para el mercado sin cáscara

El mercado mundial de la avellana creció fuertemente en 2019, con una tasa de crecimiento estimada del 33,3% en comparación con 2018.

El dominio turco del mercado de la avellana es a la vez una amenaza y una oportunidad para los productores franceses, activos desde los años 70 en Aquitania. De hecho, las avellanas son muy sensibles a las condiciones meteorológicas y un importante episodio de heladas en 2014 redujo la cosecha turca en un 40%, dejando espacio a otros actores

Aunque la producción turca ha vuelto a su nivel anterior, empieza a aparecer cierta competencia. Dado que el suroeste de Francia tiene un clima ideal para el cultivo de avellanas y que Europa es el mayor consumidor mundial, Francia tiene una verdadera carta que jugar en este mercado casi monopolístico.

El mercado francés de la producción de avellanas se basa principalmente en un actor principal, Unicoque, que representa casi el 95% de la producción.

Como en gran parte del sector agrícola, la oferta ecológica también se está abriendo paso en el mercado de la avellana en Francia, con un crecimiento del 19% en 2020 respecto a 2019 de las cremas de untar ecológicas, siendo la avellana la principal materia prima de las cremas de untar
