O mercado de ovos e ovoprodutos é muito importante em França com um consumo médio francês superior ao consumo médio europeu A França é o principal produtor europeu de ovos para consumo, com um a produção vem crescendo há vários anos. Mas outros países - como a Espanha - têm experimentado um forte crescimento nos últimos anos.

O mercado francês enfrenta cada vez mais a mudança das expectativas de procura, tanto em termos de a origem da produção (rastreabilidade do produto) do que para o tipo de agricultura de onde provêm os ovos (desejo crescente de soluções alternativas de reprodução para a gaiola adaptada). A indústria francesa organizou-se, assim, de modo a conseguir 50% da criação de galinhas em camadas alternativas (no solo, orgânica ou ao ar livre) - uma meta que já atingiu em 2020 .
