Yeast production is also expected to rise from 1,120 kilotonnes in 2017 to 2,220 kilotonnes by 2026, with an annual growth rate of around 8%.

The market structure is highly concentrated, with a few major players such as Lesaffre, based in France. Demand for yeast is diversified, due to its different applications in sectors such as bakery, alcoholic beverages, nutritional supplements and biotechnology.

Although Europe holds a global market share of around 32% in 2017, regions such as Asia-Pacific are expected to see the strongest growth, due to factors such as rising population and GDP.

The rapid development of ready meals, rising alcohol consumption and recognition of the health benefits of yeast continue to fuel the market trends seen from 2020 onwards.

The yeast market in the country has seen strong growth, marked by an increased preference for ready-made meals, regular alcohol consumption and growing awareness of the nutritional benefits offered by yeast.

Yeasts play an essential role in a variety of industries, not limited to food and beverage processing. They are an integral part of fermentation processes and influence the taste, smell and texture of a wide range of products.

There are several forms of yeast on the market, including fresh, dry and instant varieties. Their applications cover diverse sectors such as bakery products, food flavor enhancement, health and wellness supplements, alcoholic beverage production and biotechnologies such as biofuels.

Europe has a significant market share, accounting for around a third of the global market.

France is one of the world's leading yeast manufacturers. Fresh and active yeasts represent an estimated value of between 60 and 70 million euros, while baker's yeast reaches a market size of almost 60 million euros. Production of inactive yeast is estimated at around 30 million euros. Baking powders also contribute to the market, with a value of almost 9 million euros.

Imports of various types of yeast into the country come mainly from Germany, Denmark, Italy and the Netherlands.

There are some 29,600 bakery stores in France, accounting for around 45.2% of sales in the bakery sector. Average bakery sales are between 350,000 and 400,000 euros. Per capita bread consumption has fallen slightly over the years, from 160 grams per day to around 120 grams.

Per capita wine consumption has fallen from around 55 liters to just over 40 liters a year. conversely, beer consumption has risen slightly to around 50 liters per year
