1 Resumo do mercado

1.1 O cacau é o terceiro maior mercado de matérias-primas do mundo

O cacau é o mais importante obtido após uma operação de trituração de grãos de cacau, frutos de árvores de cacau. A indústria do cacau está muito claramente dividida:

  • A parte a montante que consiste na exploração de plantações de cacau e na recuperação, secagem, torrefacção e trituração de sementes de cacau. Esta indústria primária a montante é o quase monopólio dos países em desenvolvimento;
  • A parte da deglutição primária que consiste na transformação do grão bruto em "massa de cacau", um produto semi-acabado utilizado por toda a indústria do chocolate (limpeza, secagem, torrefacção, descasque e trituração) que por vezes tem lugar directamente no local de produção, mas que é muito mais frequentemente reservado às multinacionais ocidentais;
  • A parte secundária da deglutição que consiste na produção de chocolate e outros subprodutos que são distribuídos aos consumidores finais. Estas actividades secundárias e terciárias estão largamente concentradas nos países desenvolvidos;
  • Entre estes segmentos-chave da cadeia de valor do cacau encontra-se, naturalmente, a indústria dos transportes, em especial a indústria marítima, que liga as diferentes geografias envolvidas.

O mercado mundial de cacau é um mercado globalizado com um funcionamento típico dos mercados de mercadorias.

A parte da produção está largamente concentrada em África já que a Costa do Marfim e Gana, por si só, são responsáveis por mais de 60% da produção mundial de cacau no valor de mais de 4 mil milhões de toneladas . Outros países-chave na produção mundial são outros países africanos, da América do Sul e da Indonésia. Note-se que 80% da produção mundial vem de plantações familiares menos de 10 hectares.

No lado a jusante da indústria, europa e o continente americano representam a maior parte do processamento e consumo global. Convém igualmente referir que algumas multinacionais ocidentais controlam uma parte substancial do mercado mundial do produto final.

Em França a indústria de chocolate representa cerca de 400.000 toneladas por vários milhares de milhões de euros de volume de negócios e dezenas de milhares de empregos diretos.

Note-se que este mercado de matérias-primas globalizado é, em grande parte, marcado por o impacto dos mercados financeiros uma vez que os preços mundiais das bolsas físicas e dos contratos de futuros relativos ao cacau são fixados nos mercados de Londres e de Nova Iorque.
