1.1 Definición y presentación

En Italia, el mercado de la sal alimentaria se estructura en torno a dos segmentos principales: la sal para el sector privado (sal de mesa, sal de cocina) y la sal para la industria alimentaria (materia prima básica). Utilizada como conservante, la sal alimentaria aporta al cuerpo humano dos nutrientes esenciales:

  • El cloruro, un energizante clave;
  • El sodio, importante para el equilibrio hidromineral de las células y del organismo.

Este condimento esencial combina los sabores de los iones de sodio y cloruro para dar un sabor salado característico a los alimentos a los que acompaña o se incorpora. Aunque una cantidad moderada de sal es esencial para la salud, un exceso de sal puede ser perjudicial. Tanto en el mercado B2B como en el B2C mencionados, los productores de sal han visto disminuir sus volúmenes de producción en la última década, debido a la feroz competencia extranjera en el contexto de las campañas de comunicación sobre alimentación y salud.

En 2018, la sal italiana se extrajo mayoritariamente de 10 emplazamientos marinos y 5 mineros e Italia tendría capacidad para producir entre 4 y 5 millones de toneladas de sal bruta al año. Las salinas y las minas de sal de Sicilia, así como las de Cerdeña y Apulia, producen entre 750.000 y 850.000 toneladas de sal al año. La marisma de Margherita di Savoia, situada en Apulia, es la mayor de Europa.

El consumo italiano de sal alimentaria no está muy relacionado con las marcas, la compra viene dictada de hecho por variables como el precio o la comodidad, por lo que un amplio abanico de pequeñas marcas y empresas de comercio electrónico están obteniendo buenos resultados. Además, el mercado está muy concentrado en manos de grandes multinacionales extranjeras que están aumentando progresivamente su cuota de mercado en el territorio nacional con la reciente compra de varias empresas italianas de producción de sal.
