Der Geflügelmarkt ist der Markt für die Aufzucht von Geflügel, einem Hausvogel, der zu den Hühnerartigen oder Palmenartigen gehört und wegen seines Fleisches oder seiner Eier aufgezogen wird. Der Begriff bezieht sich auf alle Hinterhofvögel, die Gegenstand der Geflügelzucht sind. Die vorliegende Studie befasst sich mit der industriellen und lokalen Geflügelhaltung und ihrer Verbreitung

Der französische Geflügelmarkt wird von einigen wenigen Unternehmen beherrscht große Gruppen Dazu gehören die LDC-Gruppe und die Duc-Gruppe (2017 von der Plukon-Gruppe übernommen), die auch den europäischen Markt beherrschen. Die wichtigsten Vermarktungskanäle für Geflügel in Frankreich sind Supermärkte und Verbrauchermärkte, Restaurants und Fachgeschäfte. Im Jahr 2019 konzentrieren sich fast 3/4 der französischen Geflügelproduktion auf die Region Grand Ouest, was eine gewisse geografische Abhängigkeit des Marktes zeigt.

Der Geflügelmarkt ist in Frankreich sehr wichtig: Frankreich ist das drittgrößte Geflügelerzeugerland in der Europäischen Union . Der Geflügelverbrauch in Frankreich hat in den letzten zehn Jahren zugenommen und erreicht die Marke von 1,88 MTEC (Millionen Tonnen Schlachtkörperäquivalent) im Jahr 2020

Die wirtschaftlichen Rahmenbedingungen haben sich in den letzten Monaten für die großen Geflügelproduzenten in Frankreich eingetrübt. Diese wirtschaftlichen Schwierigkeiten lassen sich hauptsächlich durch den Anstieg der Rohstoffpreise erklären, der zu höheren Produktionskosten geführt hat. Um ihre eigenen Interessen zu schützen, waren die Supermärkte und Hypermärkte nicht bereit, auf die Notwendigkeit von Preiserhöhungen für die Hersteller zu reagieren.

Auch wenn Bio auf dem Vormarsch ist, bleibt das Segment für Bio-Geflügelfleisch in Frankreich ein Nischenmarkt. Bio-Fleisch macht in Frankreich zwischen 0,5 und 4 % des Marktes aus, mit einem Umsatz von 800 Millionen Euro im Jahr 2019. Eines der Haupthindernisse für das Wachstum dieses Sektors ist der Preis von Bio-Fleisch, der 10 bis 30 % höher ist als der von Nicht-Bio-Produkten.
