La barbacoa es un dispositivo de cocción al aire libre que consiste en una parrilla o asador, en el que tradicionalmente se utiliza carbón vegetal, y que se destina principalmente a asar carnes como salchichas, brochetas, costillas de ternera o cerdo, etc.

Sin embargo, las barbacoas de carbón tienen fama de ser tóxicas debido a la combustión de las grasas animales en contacto con las llamas del carbón, que genera unos carcinógenos llamados benzopirenos.

El mercado mundial de las barbacoas también está creciendo fuertemente, con una previsión de CAGR del 12,26% hasta 2023, incluyendo el segmento eléctrico, que probablemente ocupará cada vez más el mercado.

En Francia hay unos 11 millones de barbacoas y planchas que se utilizan cada verano para asar, asar o ahumar alimentos. De hecho, cada año se venden un millón de barbacoas nuevas y esta cifra no deja de aumentar en los últimos tiempos.

Desde 2004, la facturación del sector casi se ha cuadruplicado, gracias al aumento del volumen vendido, pero sobre todo al incremento del precio medio de la barbacoa, debido a la aparición de un segmento premium.

La gama se divide en barbacoas de carbón, de gas y eléctricas. Las planchas pueden ser de gas o eléctricas. Aunque el gas representa menos del 20% de las ventas, es responsable de más del 50% de la facturación del sector, gracias a un precio medio que es más de tres veces superior al del carbón vegetal y el eléctrico. Los fabricantes también venden barbacoas para uso profesional o semiprofesional, que pueden costar varios miles de euros.

El éxito actual del gas refleja el deseo de los clientes de variar el uso de la barbacoa, tanto en lo que respecta a los alimentos (menos carne, más verduras) como a las recetas (uso de una tapa, una bandeja para asar o una piedra para pizza). Los fabricantes aprovechan esta tendencia para comercializar accesorios complementarios que también permiten desestacionalizar la actividad.
