1.1 Définition et présentation

La soupe est une préparation alimentaire liquide qui peut se déguster chaude ou froide et contenir divers légumes (carottes, tomates, etc.), légumineuses (lentilles, haricots, etc.), des protéines animales (lait, œuf, viande, poisson, etc.) et certaines matières grasses (huiles, beurres, etc.). Pour pouvoir être appelée « soupe », une préparation doit contenir au moins 40% de légumes. Dans le cas inverse, le produit sera considéré comme étant un jus de légumes.

Différents types de soupe peuvent être distingués (liste non exhaustive) :

  • Les soupes de légumes (fraîches, en brique, instantanées, déshydratées) ;
  • Les soupes froides (gaspacho) ;
  • Les soupes de poisson (bisque).

La consommation mondiale de soupe est sur une tendance haussière. Facile à confectionner, rapide à consommer, les soupes répondent à un besoin de plats préparés qui peuvent se conserver longtemps et se consomment rapidement. Les principales entreprises du secteur sont les géants de l’agroalimentaire comme Unilever PLC, Campbell Soup Company, Conagra Brands Inc., Nestlé S.A., General Mills Inc., The Kraft Heinz Company. 

Au niveau européen, c’est l’Allemagne qui domine la production de soupes avec plus de 22% du total produit en Europe. Le Royaume-Uni se classe second, suivi par la France, l’Espagne et l’Italie. Ces cinq pays dominent très nettement la production européenne avec plus de 80% du total produit. 

L’Espagne se distingue par une production et une consommation nettement plus dynamique que ces voisins. La production locale a ainsi progressé de 53,85% entre 2012 et 2020, plus rapidement que les autres pays européens d’une taille comparable.

Environ 77% des ventes sont réalisées en supermarchés, et 15% en hypermarchés. Cette concentration des ventes a permis au marché de traverser la crise sanitaire avec succès, les ventes ayant progressé en 2020 et 2021.
