Les sauces sont des préparations liquides, incontournables qui accompagnent les plats et leur apportent une saveur particulière. Il existe différents types de sauces (préparées à la tomate ou au soja, émulsionnées, cuisinées, vinaigrettes, moutardes préparées, etc.). Elles peuvent être commercialisées dans le commerce de détail, à la restauration hors foyer (hôtels, restaurants, etc.) ou aux industriels de l’agroalimentaire qui peuvent les incorporer dans leurs plats.

Au niveau mondial, le marché des sauces est particulièrement différentié en fonction des régions et des pays. Les habitudes culinaires divergent, en effet fortement selon les zones géographiques (sauce tomate en Italie, sauce soja au Japon …) même si les consommateurs apprécient de plus en plus tester des sauces typiques d’une autre région du monde. Le marché mondial est en croissance avec une premiumisation des sauces plus locales et artisanales, ainsi qu’une plus grande consommation de plats préparés qui incluent des sauces. Parmi les géants du secteur, on peut citer Northwest Gourmet Foods, Kraft Heinz Company ou Unilever. 

En Espagne, les ventes des sauces en grandes surfaces alimentaires dépassent les 270 millions de tonnes vendues chaque année. En 2021, l'Espagne est le 10e exportateur de sauces et condiments au monde [The Observatory of Economic Complexity]. Le marché est porté par :

  • le développement d’une nouvelle offre plus légère et plus saine,
  • le lancement de nouvelles saveurs qui séduisent des consommateurs susceptibles d’essayer ces nouveautés.

La crise sanitaire a engendré une chute des ventes à destination de la restauration hors foyer, en partie compensée par la demande plus dynamique en grandes surfaces : les ménages disposant de plus de temps pour cuisiner et essayer de nouveaux plats. Les sauces locales ainsi que les sauces sans gluten, conservateur, lactose... sont en forte croissance.
