1.1 Définition et présentation

Dans la religion musulmane, halal désigne tout ce qui est autorisé par la charia, ou loi islamique, s’opposant au haram, c’est-à-dire ce qui est prohibé ou impur. Or, parmi les interdits de la religion musulmane, on trouve la consommation d’alcool, de drogue et de porc (y compris la gélatine de porc qui sert à fabriquer les bonbons) ainsi que « le sang, la bête morte ou celle sur quoi on a invoqué un autre nom que celui de Dieu » (sourate 5 du Coran), c’est-à-dire toute viande provenant d’un animal n’étant pas égorgé vivant. 

Ainsi, selon le rite musulman, pour être halal, l’animal doit être tourné vers la Mecque, égorgé et saigné par un musulman qui prononce des paroles sacrées. En Espagne comme dans le reste de l’Union Européenne, la législation impose que les animaux soient étourdis avant d’être abattus. Toutefois, des dérogations sont possibles.

En 2020, à l'échelle planétaire, le segment de marché de l'agroalimentaire halal représente 57,8% en volume, ce qui fait de lui le plus gros segment du marché halal en comparaison avec les autres secteurs halal tels que les cosmétiques, l'habillement, le tourisme "muslim friendly"... Avec plus de 1,7 milliards de musulmans à travers le monde, le marché de la viande halal devrait continuer à croitre dans les années à venir. 

 Si le pourcentage de musulmans en Espagne est de 2,3% des religions minoritaires pratiquées dans le pays, loin devant la religion catholique qui représentent environ 68,4% de catholiques de la population totale, le marché de la viande halal connaît une croissance bien au-delà de ça. D’une part, la filière de la viande en Espagne est très reconnue à l’international et exporte une partie de sa production vers des pays musulmans. D’autre part, le tourisme musulman représente 11,2% des dépenses totales et l’Espagne est une véritable plaque tournante du tourisme européen.
