1.1 Définition et présentation

Le marché de la livraison de repas à domicile est plutôt récent, mais. en plein essor, bousculant les habitudes de consommation des Espagnols. Il est apparu avec la pratique dite de « l’ubérisation » de l’économie il y a quelques années. Les livreurs de repas à domicile, souvent auto-entrepreneurs, font le lien entre les restaurants ou les dark kitchen et le client final, en livrant le repas préparés.  

Aujourd’hui, la livraison de repas à domicile n’est plus seulement réservée à la livraison d’hamburgers, pizzas et sushis, mais s’est ouverte à un large panel de restaurants : ceci répond aux nouvelles attentes des consommateurs souhaitant vivre de nouvelles expériences culinaires, manger plus sainement et commander de manière simple et rapide. Le marché a néanmoins davantage de mal à décoller en France que dans les pays anglo-saxons, car il n’est pas dans la culture française de se faire livrer des plats cuisinés chez soi ; les acteurs ont tendance à cibler les plus jeunes, ou génération Z, qui se montrent plus réceptifs à ce mode de consommation.

Le marché européen de la livraison se développe fortement avec une hausse de près de 20% par an entre 2015 et 2020. Au niveau mondial, les principales entreprises occidentales sur le secteur sont Deliveroo, Uber Eats, Just Eat, Delivery Hero ou Glovo. À l’échelle mondiale, la proportion de livraisons de repas réservée en ligne (application) a dépassé celle des réservations traditionnelles (appels téléphones, passage physique, etc.) en 2019. En 2011, ces acteurs en ligne ne représentaient que 8% du total contre 92% pour les réservations classiques.

En Espagne, les plateformes de réservation les plus fréquentes sont Telepizza, Just Eat, Glovo, Domino’s, Uber Eats et Deliveroo. Cette dernière entreprise britannique a toutefois quitté le marché en 2021 avec la promulgation de la « ley Rider » qui oblige les plateformes à salarier leurs livreurs.

Le marché a largement bénéficié de la pandémie de covid-19 avec une hausse des commandes de repas à domicile. L’ensemble des restaurants ibériques a basculé sur les plateformes en ligne pour essayer de maintenir un canal de distribution des ventes. Les dernières tendances du marché montrent une hausse des ventes de petits déjeuners livrés à domicile, ainsi que l’apparition de la haute gastronomie qui entend utiliser ce canal de ventes.

  • Just Eat Takeaway took three years to stop having salaried delivery staff in France.
