Spices are aromatic plant substances used to season food. They come from plant bark, leaves, fruit, flowers, bulbs or seeds. The spice market is generally divided into several subsets: peppers, condiments, herbs and blends.

The global spices market is expected to grow at a CAGR of more than 4% per year between 2021 and 2030. India is a heavyweight in this market, being both the largest producer and the largest consumer in the world.

The Brazilian spice market, which generated more than R$3 billion in 2020, is showing steady and substantial growth. This figure reflects Brazilians' preference for a cuisine rich in flavors and the influence of the country's cultural diversity, which integrates a wide variety of spices into its traditional recipes.

Spices are mostly produced by small farmers on small plots of land. The producers then deliver their harvest to a trader or exporter. The latter deal directly with manufacturers, who package the finished product and sell it to mass retailers. These companies serve a range of customers, including individual consumers, restaurants and the food industry.

Today's spice market is particularly dynamic, driven by trends such as the move towards more vegetarian diets, world cuisines and the growing blends segment. Spices are usually packaged in easy-to-use bags that are already measured, bringing a taste of distant lands and attracting new consumers. Although they only represent 10% of the overall market, their volume growth is estimated at +22% in 2019. The other dynamic at work in the market is the development of the professional spice market, with spices being used mainly in cheeses and chicken.

The COVID-19 pandemic has led to significant changes in the spice market in Brazil. With the limitation of activities in restaurants and the push for home cooking, there has been an increase in the purchase of spices by consumers in order to improve the taste of dishes. In addition, spices with medicinal properties, such as ginger and garlic, have been in high demand due to health concerns.
