The chosen breeding method combines three methods. A first year in a facility that is protected from pests and predators and allows a concentration of fish equivalent to that found in conventional organic farms. A second year in intermediate systems where the fish density is lower, and finally the last 6 to 10 year long period favours very extensive rearing in tanks of 5,000 to 40,000 m2.
