The Brasserie du Grand Paris adventure began in 2011 with the meeting of two craft beer enthusiasts: Anthony, an American turned Parisian, and Fabrice, a Breton turned Levalloisian. In 2013, the two friends won their first award for their beer "La Levalloise". Until the creation of their own brewery, their beers were brewed in three different locations. In 2016, the small company opened its own brewery just outside Paris, in Saint-Denis. The facility features a 20 HL brewhouse, 6 40 HL fermenters and 2 80 HL fermenters. Brasserie du Grand Paris does not filter or pasteurize its beers. The brewery offers a permanent range of 8 different types of beer.
