1.1 Definition and scope of study
Coffee consumption originated in the 15th century in Yemen, expanding into the Arabic-ottoman cultural area and rapidly into Europe. The second most traded commodity in the world after oil, coffee is also the most consumed beverage in the world after water. World consumption was estimated at 9 million tons in 2018, or 2 billion cups consumed per day. Brazil, the United States, Japan, Western and Northern European countries and the United States are the largest consumers of coffee, while most of the world's production is in Brazil, Vietnam, Colombia and Indonesia often coming from small farms of less than 5 hectares.
The coffee market has undergone a major transformation with increased consumption in the form of individual portions (capsules and capsules) to the detriment of ground or bean coffee sold in supermarkets. This trend has paved the way for many innovations in response to a growing demand for coffee in terms of origin, production methods and flavor.
According to the Brazilian Association of the Coffee Industry (ABIC), Brazil ranks second in the world market for consumers of the beverage and is the world's biggest producer, accounting for one third of global production. Moreover, the country represents 13% of world consumption of the product with 21 million bags per year. This is not surprising, since 95% of the population drinks coffee.
With an estimated annual growth rate of 3.5% between 2019 and 2021, the Brazilian product is well known internationally. The largest importers are Germany, the United States and Italy for unroasted coffee and the United States, Argentina and Japan for roasted coffee. The fastest growing segment is the premium coffee market (15% per year), which corresponds to between 5% and 10% of total consumption in the sector.
