Fermentation of lactose by these bacteria produces lactic acid, which acts on milk proteins to give yogurt its characteristic texture and sour taste

In 2019, the Italian yogurt market amounted to 427 tons and 1.4 billion packs, with a downward trend compared to the previous year. Italians are not big yoghurt consumers compared to other European countries, such as France and Germany. In terms of consumption habits, in 35% of cases yogurt is eaten in the afternoon, in 34% at breakfast and in 18% at mid-morning.
