1.1 Definition and scope of study

The truffle is the name given to what is created by a ectomycorrhizal ascomycete fungus with a globular form as defined in AgriTruffe . A single fungus can give birth to several truffles. Truffle harvests are largely dependent on weather conditions such as drought. There are hundreds of types of truffles in the world, the main ones being:

  • The black truffle (tuber melanosporum)
  • The white truffle (tuber magnatum), mainly present in Italy
  • Summer truffle (tuber aestivum)

Long monopolized by Europe, the global market is now witnessing the entry of new players, such as the United States, Australia or China. Within the European giant itself, the balance of power has changed in recent years, and spain is now the world's leading producer .
