Summary

The collective catering market in Spain, valued at €3.65 billion in 2019, faced significant challenges due to the COVID-19 pandemic with an expected revenue decline of nearly 50% in 2020. Key segments such as school canteens anticipated only 40-60% occupancy, while company canteens projected a severe drop to 10% occupancy due to the rise of teleworking, a trend predicted to persist post-crisis. Meanwhile, the social and health sector anticipated a smaller revenue decline of 15-20%, despite stringent new sanitary protocols. The major players in the market, including international firms like Serunion (Elior Group), Compass, and Sodexo, and national players such as Mediterránea de Catering, faced the need to innovate and diversify their offerings. This included a shift towards healthier, ecological offers, the integration of technology, and personalized services to adapt to changing consumer demands and the crisis's impact. As part of coping strategies, over 75% of firms resorted to temporary layoffs. Despite the market challenges, demand drivers such as the aging population and the increase in hospital employment suggest underlying opportunities for collective catering service providers post-pandemic..### Market Demand Trends in Spain's Collective Catering Industry Spain has been experiencing a dynamic shift in its collective catering market, driven by diverse sectors including education, social and health, as well as company and administration arenas. In 2019, the education sector consumed approximately one-third of the total collective catering turnover, while the social and health sector, bolstered by an aging population, contributed nearly half of the segment’s revenue. Notably, the companies and administration sector was responsible for a lesser yet significant portion, one-sixth of the turnover, with the leisure and events sector accounting for a minor segment. Within the educational sphere, a steady increase in student numbers has been recorded, with primary and secondary school attendees growing to reach between three and three and a half million in recent years. University enrollment showed a similar uptrend, with numbers crossing the one and a half million threshold, the bulk of whom attended public institutions. The social and health industry has witnessed a notable influence on collective catering demand due to Spain's demographic evolution. As the percentage of the population over 65 years old has grown from just under 17% to nearly 20% over a decade, the need for retirement home catering has surged accordingly. Life expectancy's incremental march to over 83 years adds to the increased demand in this sector, signaling a continuous need for these services. In the hospital segment, despite the number of facilities maintaining stability over two decades, the significant rise in hospital employees, totaling over half a million, underscores a growing market for in-hospital catering. The general hospitals, along with specialized geriatric and psychiatric care facilities, are the primary institutions in this category. The collective catering market in Spain, reflecting these demands, has been adapting to both societal trends and unprecedented circumstances. The Covid-19 crisis has catalyzed a swift transformation, prompting innovation in offerings and delivery mechanisms to align with new public health protocols and the shift towards remote work practices. The data extrapolated from Spain's market dynamics showcases these evolving patterns in demand for collective catering services, delineating the importance of this sector’s adaptability to both long-term demographic trends and immediate challenges posed by global crises..### Key Players Shaping the Collective Catering Landscape in Spain The collective catering market in Spain, as elsewhere, is characterized by the presence of a few global giants that dominate the sector, alongside notable national companies with significant market presence.
