O vinho é uma bebida alcoólica obtida pela fermentação das uvas, fruto das videiras. O vinho consumido pode ser tinto, branco ou rosé na França e ser plana ou cintilante. Este estudo tratará em particular do mercado do vinho branco em França, que é feito a partir da fermentação alcoólica de uvas com polpa não corada e peles brancas ou pretas.

O vinho tem uma importância cultural muito forte em França, como o demonstram os símbolos associados ao vinho pelos franceses: num inquérito realizado em 2017, 92% dos franceses associaram o vinho à tradição, 91% à convivência e 87% à partilha. É também por isso que os amigos e familiares das pessoas influenciam a decisão de compra neste sector, pois as recomendações de amigos e familiares são os principais critérios de compra para este mercado em França. Não é, portanto, surpreendente que a França seja o segundo maior consumidor de vinho do mundo (3,5 bilhões de garrafas consumidas em 2019), atrás dos Estados Unidos. A França é também o segundo maior produtor de vinho em volume (4,2 bilhões de litros de vinho produzido), atrás da Itália. [ InterVin ]

O vinho branco é historicamente a terceira cor de vinho mais consumida em França, atrás do tinto e do rosé. Contudo, existe uma tendência crescente para o consumo de vinho tinto diminuir em favor de outras cores. De fato, se em 1990, 80% do vinho bebido na França era tinto, em 2018 a realidade já era bem diferente. Quando olhamos para as vendas de vinho neste ano de DOP (quase metade dos volumes vendidos) e SIG (29% das vendas em volume) podemos ver a importância do vinho branco no mercado nacional . Durante este período, 56% das vendas de DOP e 47% das vendas de SIG foram de vinho tinto (por volume). Segundo a France AgriMer, isto permitiu que o vinho branco assumisse novas quotas de mercado, representando 19% das vendas de DOP em volume (22% em valor) e 25% das vendas de vinho SIG em volume (27% em valor).
