1.1 Definição

O trigo é um cereal da família dos gramíneas utilizados na alimentação humana e, em menor medida, na alimentação animal. A consumo humano (pão, bolachas, produtos de farinha e trigo cru) é o principal mercado, com cerca de 60% da colheita seguido pelo consumo animal de quase 30%. As outras oportunidades estão relacionadas com a u sábios industriais (fabrico de amido e de glúten), bem como a usos do substrato para o produção de biocombustíveis e bioetanol .

Existem dois tipos de trigo no mercado:

  • Trigo duro É produzido principalmente na Europa, América do Norte e Oriente Médio, que é muito rico em glúten e utilizado para a produção de sêmolas e massas.

O sector é constituído principalmente por grandes cooperativas agrícolas, gerando vários milhões de euros de volume de negócios e reunindo as explorações agrícolas e os próprios agricultores individuais. Estes actores estão à procura de motor de crescimento das exportações porque é complicado manter e melhorar as margens em França sob a pressão dos grandes distribuidores que não querem influenciar o aumento dos preços para os consumidores.

O sector do trigo é um mercado subjacente ao sector dos cereais, que é um mercado volátil porque depende de vários factores exógenos que influenciam os volumes e os preços. Em França, a produção de trigo mole registou um crescimento de 34 % em relação a 2017, representando o volume das explorações mais de 10 % da superfície total da França (o trigo mole representa quase 20 vezes a produção de trigo duro em França). O mercado do trigo está sujeito às condições climáticas, mas também a medidas políticas (ajuda financeira) e legislativas com impacto no modo de produção e na qualidade necessária.
