1.1 INTRODUÇÃO

O leite é um líquido biológico comestível de cor geralmente esbranquiçada, produzido pelas glândulas mamárias dos mamíferos fêmeas. Inversamente, o leite vegetal é uma bebida produzida a partir de plantas para substituir o leite animal: visualmente, o leite vegetal é semelhante ao leite tradicional, enquanto em termos de sabor e nutrição, o leite vegetal por vezes difere muito do leite tradicional. Na União Europeia, os nomes comerciais baseados na palavra "leite" são proibidos quando se referem a leites vegetais.

Existem vários tipos de leites vegetais que podem ser segmentados da seguinte forma:

  • A leites de "nozes" e/ou oleaginosas tais como leite de amêndoa, leite de amendoim, leite de avelã ou leite de girassol;
  • A leites de leguminosas proteaginosas como o leite de soja, o leite de ervilha ou o leite de tremoço;
  • A leites de cereais tais como leite de aveia, leite de trigo, leite de cevada ou leite de centeio;
  • A leite pseudocereal como leite de quinoa e leite de trigo sarraceno;
  • A leites de outras plantas como leite de coco, leite de gergelim ou leite de castanha.

O leite vegetal é consumido para várias razões em França: o impacto do leite na saúde (intolerância ou alergia ao leite, problemas relacionados com o consumo de proteínas animais), a escolha de uma dieta vegana ou vegetariana, a ética relacionada com a oposição à exploração animal, a religião ou por razões ambientais ou climáticas.

O mercado francês do leite tradicional está dividido entre agricultores, fabricantes e distribuidores, estes últimos, na sua maioria gigantes do sector agro-alimentar, com o maior poder de negociação. Para ganhar quota de mercado, os gigantes do leite assumiram o desafio da internacionalização, apostando no forte crescimento da procura na China (onde os escândalos sanitários que afectaram o sector local beneficiaram o leite francês), mas também na leite vegetal como o Danone, que pretende propor-se a novas gamas de iogurtes de leite e vegetais .

Para alguns, evitar laticínios tornou-se um modo de vida tradicional, com marcas como Alpro , Sojasun e Bjorg . No futuro, os substitutos do leite devem atrair um número cada vez maior de consumidores que se afastam principalmente do leite de vaca tradicional em favor de um leite mais saudável e mais à base de vegetais.
