O mercado de conchas abrange a produção, colheita e distribuição de produtos hortícolas frescos e frutas. As primeiras frutas e legumes comercializados por atacadistas ou produtores locais.

O valor do consumo das famílias de frutas e produtos hortícolas frescos (excluindo as batatas) está estimado em mais de 15 mil milhões de euros. Os futuros constituem o terceiro maior canal de distribuição de frutas e produtos hortícolas em França e representam uma pequena parte do volume de negócios do mercado, muito atrás dos supermercados. O consumo de restauração fora de casa e o consumo próprio dos produtores completam as fontes de consumo de frutas e produtos hortícolas em França.

As famílias francesas compram, em média, cerca de 85 kg de frutas e legumes frescos por ano, com um orçamento de 350 euros por família. As famílias francesas, preocupadas com a qualidade dos produtos alimentares, estão a comprar mais fruta e produtos hortícolas desde os primeiros tempos, o que está a aumentar a quota de mercado do circuito.

Muito fragmentado e muito concorrencial, o mercado primeur continua a ser dominado no seu segmento de distribuição por um pequeno número de grossistas, com cerca de metade das frutas e produtos hortícolas frescos distribuídos em França pelos grossistas dentro e fora do mercado

O mercado de futuros continua intrinsecamente sujeito a riscos climáticos e meteorológicos, o que explica o aumento ocasional dos preços, para não falar da situação internacional (embargo russo), dos preços das matérias-primas e dos combustíveis, etc. Os actores do mercado de futuros procuram posicionar-se na agricultura biológica, que agora se tornou uma necessidade na indústria alimentar.
