1.1 INTRODUÇÃO

As frutas e legumes "orgânicos" provêm da agricultura biológica: a produção é natural não usando nenhum produto químico sintético como pesticidas, herbicidas, fertilizantes artificiais ou hormonas de crescimento. As frutas e verduras orgânicas são as mais importantes maior segmento e a mais dinâmica no mercado global de alimentos orgânicos (que também inclui bebidas, biscoitos, carne e outros condimentos).

O aumento da procura de frutas e produtos hortícolas biológicos deve-se principalmente ao aumento da sua produção e ao aumento do consumo mundial. No entanto, a oferta de frutas e produtos hortícolas biológicos é limitada em relação ao seu pedido, devido à sua custo de produção que permanece elevado. Apesar do preço mais elevado das frutas e produtos hortícolas biológicos, os consumidores estão dispostos a pagar mais pelos alimentos biológicos devido a várias vantagens relacionadas com a sua utilização/produção: menor utilização de pesticidas e elevado valor nutricional. A sensibilização dos consumidores para os consumidores no benefícios de saúde dos produtos biológicos deve estimular as vendas no mercado das frutas e produtos hortícolas biológicos.

O mercado de frutas e legumes orgânicos vem crescendo de forma constante há 10 anos na França: em 2016, o mercado de orgânicos na França alcançou um valor de mais de 278% em relação a 2007. Na França, a distribuição de produtos orgânicos é muito diversificada: supermercados tradicionais, mercados, lojas especializadas em produtos orgânicos, vendas diretas, artesãos, restauração comercial e coletiva... tantos canais para atender às expectativas dos consumidores que seguem a agricultura orgânica e o comércio justo. O número de distribuidores certificados aumentou consideravelmente nos últimos anos, com uma multiplicação de mais de 20 entre 2005 e 2016. Antes de 2010, quase 70% da distribuição de produtos orgânicos era feita por lojas especializadas em produtos orgânicos, enquanto hoje, a distribuição se tornou mais democrática em relação aos GSAs.

A tendência actual é a de comprar semanalmente cabazes orgânicos com uma multiplicidade de empresas que oferecem este serviço. Por exemplo, existem jardins sociais (Réseau Cocagne), a distribuição de cabazes por uma empresa de distribuição (La Vie Claire) ou por um grossista (Le Campanier). O setor de varejo de massa entendeu este fenômeno e a aquisição da Naturalia pela Monoprix em 2008 demonstra isso mesmo.
