A avelã é uma semente oleaginosa pertencente à família das nozes. Originária da Turquia, que é em grande parte o maior produtor mundial, a avelã é utilizada principalmente na gastronomia e, mais especificamente, em barrar. Há duas famílias principais de avelãs francesas:

  • Avelãs grandes (coutard fertile, corabel, ennis) para consumo directo, secas e/ou torradas
  • Pequenas avelãs (segorbe, pauetet) muitas vezes reservadas para o mercado de avelãs

O mercado global de avelãs cresceu fortemente em 2019, com uma taxa de crescimento estimada de 33,3% em comparação com 2018.

O domínio turco do mercado das avelãs é uma ameaça e uma oportunidade para os produtores franceses, que estão activos desde os anos 70 na Aquitânia. Na verdade, as avelãs são muito sensíveis às condições climáticas e um grande episódio de geadas em 2014 reduziu a colheita turca em 40%, deixando espaço para outros jogadores

Embora a produção turca tenha voltado ao seu nível anterior, alguma competição está começando a aparecer. Dado que o sudoeste da França tem um clima ideal para o cultivo de avelãs e que a Europa é o maior consumidor mundial, a França tem uma verdadeira cartada a jogar neste mercado quase monopolista.

O mercado francês de produção de avelãs é baseado principalmente em um dos principais players, Unicoque, que responde por quase 95% da produção.

Como em grande parte do sector agrícola, a oferta biológica também está a fazer incursões no mercado das avelãs em França, com as pastas orgânicas a crescerem 19% em 2020, em comparação com 2019, sendo as avelãs a principal matéria-prima para barrar
