O mercado de carne suína em França reúne criadores, abatedores, processadores, retalhistas, açougueiros, fornecedores de refeições, açougueiros e retalhistas em massa. Na França, c ome players integraram toda a cadeia de valor, como Leclerc e Les Mousquetaires como produtores e distribuidores.

A população mundial de suínos está actualmente em declínio, uma vez que o efectivo suíno chinês sofreu grandes perdas em 2018-2019 devido à Febre Suína Africana. Esta doença levou a uma série de abates forçados e grandes quantidades de carne chinesa afogada nos mercados mundiais em 2018. No entanto, em 2019, como a produção chinesa não podia mais atender ao consumo interno, a China começou a importar grandes quantidades, causando um aumento de preço recorde porco.

Embora os produtores franceses tenham beneficiado deste aumento de preços desde 2019, não é suficiente reanimar o mercado francês, cujo crescimento tem estado a meio mastro há muitos anos. A carne de porco está gradualmente a perder terreno nos hábitos de consumo franceses. No entanto, continua a ser a primeira carne consumida em França e já o é há mais de 20 anos. De facto, a carne de porco continua a seduzir com os seus preços baixos e a sua grande variedade de produtos de charcutaria que representam quase 70% do mercado.

O setor parece estar se voltando cada vez mais para a agricultura orgânica, com o compromisso de aumentar a participação de orgânicos na produção total para 10% até 2030, mantendo assim novas formas de consumo e despertando o interesse dos consumidores
