1.1 Définition et périmètre d'étude

Le yaourt est un produit laitier coagulé produit par la fermentation bactérienne du lait. Les bactéries utilisées pour la fabrication du yaourt sont connues sous le nom de bactéries thermophiles lactiques. La fermentation du lactose par ces bactéries produit de l'acide lactique, qui agit sur les protéines du lait pour donner au yaourt sa texture caractéristique et son goût acidulé.

À l'échelle mondiale, le marché se développe parallèlement à la reconnaissance des bienfaits du yaourt pour la santé. L'Asie est la région qui en consomme le plus, avec 26 % du marché. On s'attend à ce que l'Asie soit également le principal moteur de la croissance à l'avenir en raison de l'augmentation du pouvoir d'achat et de la sensibilisation aux questions de santé.

En 2019, le marché italien du yaourt représentait 427 tonnes et 1,4 milliard d'emballages, avec une tendance à la baisse par rapport à l'année précédente. En revanche, le marché du yaourt grec a enregistré une croissance de 7 %, atteignant 154,5 millions de packs. Le canal des discounters est le canal de distribution qui a enregistré les meilleures performances.

Les Italiens ne sont pas de grands consommateurs de yaourts par rapport à d'autres pays européens, comme la France et l'Allemagne. En termes d'habitudes de consommation, dans 35 % des cas, le yaourt est consommé l'après-midi, dans 34 % des cas au petit déjeuner et dans 18 % des cas en milieu de matinée.

À l'avenir, les acteurs rechercheront la croissance organique, notamment par l'innovation et l'augmentation du nombre de produits proposés. Le marché des produits biologiques continue de croître fortement, le sous-segment du yaourt biologique bénéficiant de cette croissance. Cette tendance devrait se poursuivre à l'avenir et laisse présager des perspectives positives pour le marché.
