1.1 Définition et périmètre d'étude

Le nom "sucre" fait référence au saccharose, un disaccharide au goût sucré composé d'une molécule de glucose et d'une molécule de fructose, provenant principalement des plantes sucrières. La canne à sucre et la betterave sucrière sont les deux principales sources de sucre ; la noix de coco et l'érable sont d'autres sources de sucre. Le Brésil et l'Inde, qui représentent ensemble un tiers de la production mondiale de sucre, dominent le marché mondial ; l'Union européenne est le troisième producteur mondial. Le sucre est l'élément de base de nombreux produits alimentaires tels que les snacks, les gâteaux, les biscuits et est présent dans la plupart des boissons gazeuses. Le sucre a des applications non seulement dans le secteur alimentaire mais aussi dans le secteur pharmaceutique, comme la production de sirops et de médicaments pour enfants. Les techniques d'extraction de ces deux plantes diffèrent, mais la purification, la concentration, le raffinage et la cristallisation suivent le même cours. Nous obtenons environ 15 kilogrammes de saccharose cristallin et environ 5 kilogrammes de mélasse à partir de 100 kilogrammes de betteraves, qui contiennent encore environ deux kilogrammes et demi de sucre.

En 2020, le marché mondial du sucre a atteint un volume de 193,2 millions de tonnes et devrait atteindre un volume de 202,1 millions de tonnes d'ici 2026. En termes de valeur, le marché mondial du sucre industriel devrait atteindre 45,6 milliards USD d'ici 2026. 2027, avec un taux de croissance annuel moyen de 6,5 % entre 2020 et 2027.

Avec la mise en œuvre de la réforme de l'UE en 2006, l'Europe a fait passer les plus grandes entreprises sucrières du statut de grands exportateurs à celui d'importateurs. Cela a eu un impact important en Italie, qui a dû réduire sa production de 1,5 million de tonnes avant la réforme à 508 000 tonnes aujourd'hui. Il y a quatre usines sucrières dans la région et la superficie cultivée en betteraves sucrières est d'environ 50 à 60 000 hectares. Seuls 30 % des besoins italiens sont satisfaits au niveau national, le reste étant importé. L'Italie, qui n'est pas l'un des premiers pays à produire du sucre, dispose d'un grand potentiel de croissance, notamment dans le domaine des substituts biologiques du sucre tels que les édulcorants. Coprob, une coopérative de producteurs de betteraves, contrôle deux usines à Manerbio, près de Bologne, et à Pontelongo, près de Padoue, où le sucre italien est désormais produit.

En Italie, le marché des édulcorants remplaçant le sucre naturel prend de l'ampleur. La stévia est l'alternative la plus courante et dispose d'un marché important et bien établi : Coca-Cola, Zuegg, Vigorsol et EstaThe ont tous utilisé la stévia ou plutôt les stéviosides comme édulcorant dans leurs produits.
