Le foie gras est une friandise préparée à partir du foie gras du canard ou de l'oie. Cependant, plusieurs pays, dont l'Italie, en interdisent la production. Pour obtenir du foie gras, les animaux sont nourris par gavage, c'est-à-dire par un tube qui alimente continuellement l'animal avec des repas gras afin d'augmenter la taille du foie. On estime que 80 % de la production mondiale est réalisée en France, avec plus de 20 000 tonnes par an. Parce qu'il implique une douleur importante pour les animaux, le foie gras est l'un des repas pour animaux les plus contestés au monde. En Italie, la campagne "Stop foie gras" menée par "Essere Animali" a permis d'en interdire la vente dans les supermarchés.

Malgré les récentes restrictions à la production et à la distribution dans certains pays (dont New York et la Californie), le marché du foie gras était évalué à 1168,7 millions USD en 2020 et devrait atteindre 1198,8 millions USD d'ici 2028, avec un taux de croissance annuel moyen de 1,8 % entre 2021 et 2028, selon les dernières études de marché.

En Italie, comme nous l'avons déjà mentionné, la production est interdite, mais pas l'importation ni le commerce, mais avec diverses restrictions visant à réduire la consommation ; aujourd'hui, en Italie, le foie gras n'est disponible dans aucun supermarché, mais il peut encore être acheté dans les boutiques en ligne de produits typiques et dégusté librement dans les restaurants. c'est un aliment qui coûte environ 80-100 euros par kilo en Italie, un prix marqué par les difficultés de consommation et qui n'est pas à la portée de tout le monde.

Après l'interdiction officielle du foie gras émise à New York, qui est entrée en vigueur en 2022, la production de foie gras a certainement besoin d'une production plus éthique.

C'est là qu'intervient une étude toulousaine de chercheurs qui produiraient du foie gras en utilisant des bactéries pour agrandir le foie des oies, évitant ainsi l'engraissement forcé. Le procédé est très coûteux et entraînerait une augmentation significative des coûts de production, mais permettrait d'éviter des pratiques interdites dans les pays les plus mondialisés.
