Un arôme alimentaire est un ingrédient qui donne un goût et/ou une odeur spécifique à l'aliment dans lequel il est incorporé à très faible dose. Les arômes alimentaires peuvent être naturels ou artificiels.

Le marché mondial des arômes devrait croître à un rythme soutenu de 4,8 % par an entre 2020 et 2025. Cette augmentation est tirée par les pays émergents, l'Asie étant déjà le premier continent consommateur d'arômes alimentaires, mais aussi l'Amérique du Sud, qui devrait afficher la plus forte croissance au cours de cette période.

En Italie, la situation du marché n'est pas aussi dynamique. En effet, le marché italien n'a progressé que de 0,8 % en valeur et de 1,4 % en volume par rapport à 2018. En outre, le marché des arômes ne représente que 15 % du marché plus large des épices et des arômes, qui est plutôt dominé par les herbes et les épices.

En termes de distribution, la grande distribution représente environ 80 % en valeur et 70 % en volume. Cependant, le canal qui connaît la plus forte croissance est le Discount (qui comprend des magasins d'alimentation), avec +7% en valeur et en volume, principalement en raison de la domination des marques de distributeurs. Les marques de distributeur représentent 26,5 % du marché.

Le marché italien des arômes est principalement caractérisé par l'attrait du consommateur pour le naturel. Cette tendance entraîne un fort intérêt pour les arômes naturels, recherchés tant pour leurs bienfaits sur la santé et l'environnement que pour leur capacité à ajouter de la saveur à la cuisine moderne, saine et naturelle. Les entreprises opérant sur le marché s'efforcent donc d'élargir leur offre pour répondre à ces nouveaux besoins et anticiper les tendances futures.
