Le marché de la viande prend en compte :

  • la vianderouge (qui comprend la viande des bovins adultes, des veaux et des ovins) ;
  • la viandeblanche (qui comprend la viande de porc et la volaille).

Dans le cadre d'une sensibilisation accrue à une alimentation équilibrée et saine, certains types de viande (principalement la viande rouge) continuent de voir leurs ventes en volume diminuer. Toutefois, cette même tendance est un catalyseur de la croissance de la demande de produits haut de gamme , les consommateurs étant de plus en plus disposés à payer plus cher pour des aliments de haute qualité. En d'autres termes, les ventes globales ne sont pas fortement affectées.

Au niveau mondial, l'Asie représente environ 44,5 % de la consommation totale de viande. Ce chiffre est en corrélation avec la population asiatique. De plus, comme les revenus disponibles augmentent, les individus cherchent à consommer davantage de viande.

Aux États-Unis, le porc a connu la plus forte croissance en volume en 2019 (+3%). Globalement, le marché américain a connu une croissance de 2% en volume en 2019. Cette croissance devrait se poursuivre, car les consommateurs recherchent des sources de protéines. Dans cette optique, la volaille est la sous-catégorie de viandes la plus populaire, représentant environ 50 % des ventes aux États-Unis en 2019. Cette part de marché va augmenter à l'avenir.

Laproduction locale est de plus en plus privilégiée sur fond de scandales liés à la viande, mais aussi pour soutenir les écosystèmes locaux et limiter l'impact sur l'environnement.

Les trois plus grands transformateurs de viande sont Tyson Foods, JBS USA et Cargill Meat Solutions.
