1 Panoramica del mercato

1.1 Definizione e ambito dello studio

Nella religione musulmana, halal significa tutto ciò che è permesso dalla Sharia o legge islamica, opponendosi alla haram Cioè, ciò che è proibito o impuro. Tra le proibizioni della religione musulmana ci sono il consumo di alcol, droghe e carne di maiale (compresa la gelatina di maiale usata per fare i dolci) così come " il sangue, l'animale morto o quello su cui è stato invocato un altro nome che quello di Dio " (Sura 5 del Corano), cioè qualsiasi carne di un animale che non è macellato vivo

Così, secondo il rito musulmano, per essere halal, l'animale deve essere girato verso la Mecca, sgozzato e dissanguato da un musulmano, una pratica che deroga alla legislazione francese secondo la quale l'animale deve essere stordito prima di essere macellato.

Nel 2020, su scala globale, il segmento di mercato degli alimenti halal rappresenta il 57,5% in volume, il che lo rende il più grande segmento del mercato halal rispetto ad altri settori halal come i cosmetici, l'abbigliamento, il turismo "muslim friendly"...

La prescrizione halal ha suscitato alcune controversie in Europa, in particolare tra i gruppi per il benessere degli animali. Inoltre, non esiste un'etichetta halal in Francia, a differenza dei prodotti kosher che sono garantiti dal Concistoro centrale degli ebrei di Francia: ci sono quindi diversi metodi di certificazione halal.

Nonostante queste difficoltà di certificazione, la mania per il mercato della carne c'è, poiché tutti i prodotti halal, compresa la carne, hanno sperimentato 14,9% di crescita in valore nel 2020 rispetto al 2019 e che il 1° Salone del Franchising Halal si è tenuto a Parigi nel 2020. Così, questo mercato sembra essere in costante crescita con una strutturazione del mercato che tende a svilupparsi, come Isla Délice che ha sperimentato un aumento regolare dall'8 al 10% delle sue vendite tra il 2010 e il 2020.
