1.1 Presentazione e definizione del mercato del gelato e del sorbetto

Il gelato è un alimento a base di latte, zucchero, frutta o una varietà di ingredienti e sapori . Il sorbetto è invece un alimento a base di sciroppo di zucchero e polpa di frutta o aromi .

Nei negozi sono disponibili diversi tipi di gelato: coni e gelati su stecco (a volte venduti singolarmente), specialità di gelato da condividere (tronchetti e torte gelato) o anche vaschette e barattoli di gelato e sorbetti venduti nella GDO.

In termini di volume, il mercato del consumo domestico è dominato dalle specialità individuali (coni, gelati su stecco, ecc.) e dai sorbetti e gelati sfusi (in particolare le vaschette di frutta), mentre il resto è costituito da specialità collettive stagionali (tronchetti di Natale, ecc.). È il segmento dei gelati snack che gioca il ruolo più importante nella vendita di gelati durante il periodo estivo e il consumo di gelato varia notevolmente durante l'anno e da un anno all'altro, a seconda delle condizioni climatiche.

Il mercato mondiale del gelato e dei sorbetti è stato stimato a 57.9 miliardi nel 2018 .
