Il mercato dei formaggi in Francia può essere suddiviso in due categorie principali:

  • Formaggio naturale, prodotto con ingredienti naturali, freschi e di alta qualità;
  • Formaggio trasformato, ottenuto da formaggio naturale a cui vengono aggiunti emulsionanti (due liquidi insolubili), citrato di sodio, fosfato di calcio, acido sorbico (conservante), enzimi e altri additivi.il formaggio fuso è ottenuto dal formaggio naturale con l'aggiunta di emulsionanti (due liquidi insolubili), citrato di sodio, fosfato di calcio, acido sorbico (conservante), enzimi, vitamina D3, grasso del latte, sale extra, oli vegetali saturi, siero di latte e coloranti alimentari artificiali.

Il formaggio fuso ha una durata di conservazione più lunga rispetto al formaggio naturale nei negozi di formaggi e nei supermercati. Con quasi 400 tipi diversi di formaggio, la Francia è il primo paese al mondo per la produzione di formaggi. Ma la sua egemonia è sempre più messa in discussione dai cambiamenti dietetici che colpiscono il settore.

La produzione di formaggi è un settore concentrato , dominato da una manciata di operatori, come Bel o Sodiaal (1/3 del mercato francese dei formaggi). Gli altri principali attori del mercato sono gruppi a conduzione familiare (Savencia è specializzata nella lavorazione del latte), gruppi cooperativi o produttori di latte come Lactalis.

I francesi sono tra i principali consumatori di formaggio al mondo, con oltre 25 kg/abitante all'anno. La crescita della grande distribuzione a scapito dei negozi locali ha indebolito i prodotti artigianali venduti nei caseifici locali e la maggior parte del formaggio commercializzato è ora di produzione industriale. Ciò ha favorito l'emergere di nuovi attori, come Carrefour , nella distribuzione e nella produzione di formaggi a marchio privato. Anche l'armonizzazione delle norme sanitarie imposta da Bruxelles è una manna per i formaggi industriali.

In termini di commercio estero, la bilancia commerciale francese è positiva, con la Francia che esporta 1,6 volte più di quanto importa nel 2021. I principali clienti delle esportazioni sono la Germania, con il 23% del totale delle esportazioni francesi, il Belgio (14%) e il Regno Unito (8%). Ma le importazioni di formaggio sono in aumento da diversi anni, per soddisfare una domanda multiforme. L'Italia in particolare sta beneficiando della situazione, rappresentando 1/3 delle importazioni francesi.

Tuttavia, la volatilità dei prezzi mondiali dei prodotti lattiero-caseari industriali indebolisce la redditività dei produttori: per contrastare questi rischi economici e guadagnare quote di mercato, i produttori puntano sull'innovazione (nuovi formati, confezioni) e sulla comunicazione (ingenti budget pubblicitari).
