Il barbecue è un dispositivo di cottura all'aperto costituito da una griglia o da uno spiedo, dove tradizionalmente si usa la carbonella, ed è destinato principalmente a grigliare carni come salsicce, brochettes, costolette di manzo o maiale, ecc.

Tuttavia, i barbecue a carbone hanno la reputazione di essere tossici a causa della combustione dei grassi animali a contatto con le fiamme del carbone, che genera cancerogeni chiamati benzopireni.

Anche il mercato globale dei barbecue è in forte crescita, con un CAGR previsto del 12,26% fino al 2023, compreso il segmento elettrico, che probabilmente occuperà sempre di più il mercato.

Ci sono circa 11 milioni di barbecue e planchas in Francia ogni estate, che vengono utilizzati per grigliare, arrostire o affumicare il cibo. In effetti, 1 milione di nuovi barbecue sono venduti ogni anno e questa cifra è in costante aumento negli ultimi tempi.

Dal 2004, il fatturato del settore è quasi quadruplicato, grazie all'aumento del volume venduto, ma soprattutto grazie all'aumento del prezzo medio del barbecue, dovuto all'emergere di un segmento premium.

La gamma è divisa in barbecue a carbone, a gas ed elettrici. Le planchas possono essere a gas o elettriche. Anche se il gas rappresenta meno del 20% delle vendite, è responsabile di più del 50% del fatturato del settore, grazie a un prezzo medio che è più di tre volte superiore al carbone e all'elettrico. I produttori vendono anche barbecue per uso professionale o semi-professionale, che possono costare diverse migliaia di euro.

Il successo attuale del gas riflette il desiderio dei clienti di variare il loro uso del barbecue, in termini di cibo (meno carne, più verdure) e di ricette (uso di un coperchio, di una teglia o di una pietra per pizza). I fabbricanti approfittano di questa tendenza per commercializzare degli accessori complementari che permettono anche di destagionalizzare l'attività.
