1.1 INTRODUZIONE

La frutta e la verdura "biologica" provengono da agricoltura biologica: la produzione è naturalistico non utilizzando nessuna sostanza chimica sintetica come pesticidi, erbicidi, fertilizzanti artificiali o ormoni della crescita. La frutta e la verdura biologica sono i più importanti segmento più grande e il più dinamico nel mercato globale degli alimenti biologici (che comprende anche bevande, biscotti, carne e altri condimenti).

L'aumento della domanda di frutta e verdura biologica è dovuto principalmente all'aumento della produzione e al crescente consumo globale. Tuttavia, l'offerta di frutta e verdura biologica è limitata in relazione alla sua richiesta, a causa della sua costi di produzione che rimangono elevati. La tendenza attuale è quella di acquistare cestini biologici settimanali con una moltitudine di aziende che offrono questo servizio. Ad esempio, ci sono gli orti sociali (Réseau Cocagne), la distribuzione di cesti da parte di una società di distribuzione (La Vie Claire), o di un grossista (Le Campanier). Il settore della grande distribuzione ha compreso questo fenomeno e l'acquisizione di Naturalia da parte di Monoprix nel 2008 lo dimostra.
