1.1 INTRODUZIONE

A alicamento (o "medicalmente", o "nutraceutico") si riferisce ad un alimento con virtù farmaceutiche . Può essere un alimento naturale contenente molecole attive o alimenti industriali arricchiti artificialmente. Questa designazione può influire sul commercio di alicaments in quanto stabilisce diverse questioni etiche e commerciali . La segmentazione utilizzata nel mercato è quella che contraddistingue alimenti industriali (come gli alimenti arricchiti con Omega-3, alimenti ricchi di Bifidus attivo, ecc medicine naturali (come la fitoterapia o la fitoterapia).

Il mercato degli alicaments sembra rallentare dopo gli anni '90 e 2000, che hanno riscosso un certo successo. Si tratta di abusi di marketing che promuovono i meriti dei prodotti con benefici per la salute ben al di sopra degli effetti reali sul corpo, spingendo i consumatori a parlare di una vera e propria "truffa". Negli Stati Uniti, Danone è stato multato decine di milioni di dollari per un reclamo di un consumatore che ha messo in discussione i benefici di Actimel . La normativa europea garantisce l'eliminazione della pubblicità, considerata ingannevole.

Tutte le aziende presenti su questo mercato sono automezzi pesanti nell'industria agroalimentare. La concorrenza è quindi estrema in un mercato alimentare globale che equivale a più di 200 miliardi di dollari .

La sfida per il settore è quella di giustificare una differenza di prezzo consumatori (uno yogurt Bifidus costa il doppio di uno yogurt tradizionale). I consumatori, aiutati dalle autorità europee, resistono. L'Agenzia europea per la sicurezza alimentare (EFSA), responsabile dell'esame dei fascicoli delle indicazioni, ha esaminato 1 750 delle 4 200 indicazioni mantenute, con l'85% dei pareri negativi finora pervenuti.
