1.1 Presentación

La hostelería representa el conjunto de la industria hotelera y sus actividades: pertenece al sector terciario y representa a los establecimientos que ofrecen un servicio de recepción y, más concretamente, de alojamiento y/o de alimentación a los clientes. Por ello, este sector se asocia a menudo con la restauración. Sin embargo, este estudio se centra exclusivamente en los establecimientos que son hoteles, que pueden o no prestar servicios de restauración, y en los servicios de alojamiento que ofrecen.

Hay tres tipos diferentes de hoteles:

  • Los independientes : estructuras no pertenecientes a una cadena hotelera, propietaria de su explotación y legalmente autónoma;
  • Afiliados : también conocidas como cadenas voluntarias, están formadas por establecimientos tradicionales independientes que se unen para facilitar su comercialización;
  • El sistema integrado explotados por un grupo hotelero o en franquicia

A nivel mundial, se espera que el mercado de la hostelería crezca a una CAGR (tasa de crecimiento anual comparada) del 12,9% entre 2020 y 2027. Se trata de un sector que ha experimentado serias dificultades durante la crisis sanitaria mundial vinculada a Covid-19, lo que ha acentuado la precariedad de ciertos actores y ciertas regiones, más o menos centradas en el turismo que otras. Sin embargo, las perspectivas de crecimiento muestran que este tipo de alojamiento sigue atrayendo a los clientes, aunque el sector aún no haya recuperado su nivel anterior a la crisis.

En lo que respecta al mercado francés, en 2020 se produjo una caída de más del 50% en la facturación de los hoteles, que fue más pronunciada para ciertas regiones y ciertas gamas de hoteles que para otras. Este fue el caso, en particular, de la región de París y de los hoteles de alta gama, que registraron las mayores pérdidas del país.
