1.1 El cacao es el tercer mercado de materias primas más grande del mundo

El cacao es el más importante polvos obtenido tras una operación de trituración de granos de cacao, frutos de árboles de cacao. La industria del cacao está claramente dividida en:

  • La parte aguas arriba que consiste en la explotación de plantaciones de cacao y la recuperación, secado, tostado y molienda del cacao en grano. Esta industria primaria es el cuasi-monopolio de los países en desarrollo;
  • La parte primaria de la deglución que consiste en la transformación del grano crudo en "masa de cacao", producto semielaborado utilizado por toda la industria chocolatera (limpieza, secado, tostado, descascarillado y molienda), que a veces tiene lugar directamente en el lugar de producción, pero que más a menudo está reservado a las multinacionales occidentales;
  • La parte secundaria de la deglución que consiste en la producción de chocolate y otros subproductos que se distribuyen finalmente a los consumidores finales. Estas actividades secundarias y terciarias se concentran en gran medida en los países desarrollados;

En el lado posterior de la industria, europa y el continente americano representan una parte importante del procesamiento y consumo mundial. Cabe señalar también que algunas multinacionales occidentales controlan una parte sustancial del mercado mundial de productos finales.

En Francia la industria chocolatera representa alrededor de 400.000 toneladas por varios miles de millones de euros de facturación y decenas de miles de empleos directos.

Cabe señalar que este mercado globalizado de materias primas se caracteriza en gran medida por el impacto de los mercados financieros ya que los precios mundiales de los intercambios físicos y los contratos de futuros para el cacao se fijan en los mercados de Londres y Nueva York.
