1.1 Vorstellung und Definition des Marktes

Die Suppe ist eine flüssige kulinarische Zubereitung, meist auf der Grundlage von gekochtem Gemüse, die kalt oder warm serviert werden kann.

Normalerweise besteht eine Suppe aus gekochtem Gemüse und Hülsenfrüchten wie z. B. Bohnen oder Linsen, aber manchmal werden diese Zutaten auch mit tierischem Eiweiß (Fleisch, Fisch, Milch, Eier, Käse), Fett (Speck, Butter, Öle, Crème fraîche) und seltener mit Obst kombiniert.

Verschiedene Arten von Suppen können unterschieden werden (nicht erschöpfende Liste) :

  • Gemüsesuppen (frisch, aus dem Glas, Instant, dehydriert) ;
  • Kalte Suppen (Gazpacho) ;
  • Fischsuppen (Bisque).

Es gibt eine Gebrauchsnorm für Gemüsesuppen, um den Verbrauchern eine Qualitätsgarantie zu geben: Um die Bezeichnung "Suppe" zu erhalten, muss ein Produkt mindestens 40 % Gemüse enthalten. Ist dies nicht der Fall, wird das Produkt als Gemüsesaft bezeichnet.
