The Pastry Market: industrial and home-made cakes | France

Fresh industrial pastries, positioned on increasingly qualitative products and sales in large and medium-sized supermarkets, are experiencing strong growth. Within this sector, individual setups are leaders of industrial baked goods, outperforming home-made formats. The turnover of industrial pastries is estimated at 1.19 billion euros, with growth of 3.8% in 2015. The tonnage is mainly divided between individual pastries (more than 44%) and home-made pastries and cakes (about 43%), far ahead of baked pasta (8%) and gingerbread (4%). 

Artisanal pastry-making is losing ground and must offer quality products to counter this trend. Indeed, pastries make up 50% of a bakery’s turnover and it is therefore essential to maintain the course on this sector. Nevertheless, pastries are still a pleasure to buy: after bread, it is the second most popular purchase that consumers make near their homes and they like to buy dessert when receiving guests. Moreover, as the snacking trend grows, artisan bakeries must respond accordingly. The artisanal pastry sector is made up of 4,800 companies. 

The market players within the home-made cake sector are divided between bakeries and artisanal bakeries (manufacturing and sales), baking terminal chains (sales), fresh industrial pastries producers (manufacturing) and specialist shops (sales). Lenôtre is the market leader in traditional pastry making. However, Le Pétrin Ribeirou, Délifrance, La Mie Galine or L'Epi Gaulois are also major contenders. The market leaders in industrial pastry making are Mondelez, Jacques Brossard and private brands.
