Jams are whole fruits and sometimes (only rarely) vegetable pulp crushed and heated with water and sweetened. Some fruits, like blueberries, cherries and pineapple, require adding a compound called pectin that naturally binds the molecules, while other fruits, like cranberries, tart apples, gooseberries and currants, do not require artificially added pectin.

Manufacturers have been labelling their products as ‘natural’ for a long time but the consumers are now aware that this is not always the case. The increase in demand for organic products and products without artificial ingredients is an indicator of the same. Natural sugar has been accused by many as the primary cause of obesity in children and young adults. Products with artificial sweeteners have also lost appeal among health conscious consumers as they carry other ill effects. All these factors indicate a slow, long term decline in the jam market. Chocolate spreads and peanut butter have also been eating into the traditional jam market.

According to the U.S. Census data and Simmons National Consumer Survey (NHCS), 283.4 million Americans out of 300 million used jams, jellies and preserves in 2011. This figure was projected to decrease to 271.86 million in 2020.

The global jam, jelly and preserves market is expected to reach USD 9.3 billion by 2022, growing at a 3.2% CAGR during the forecast period. In the US, it was estimated to be USD 3.5 billion in 2016 and the average CAGR has been around 2.8% since 2010.

This is a market where the dominant players and  given tough competition by the small players.
