For 25 years, Caviar Perlita has defended a traditional know-how and a French production of exemplary quality, proudly representing Aquitaine Caviar in France and abroad.

Hidden in the middle of the Landes forest, the L'Esturgeonnière fish farm that produces Perlita Caviar has been in existence since the early 1990s. As one of the three pioneering companies in this sector, it is the only one in France to have been built from scratch for sturgeon farming. At the time, the activity was focused on the production of sturgeon meat and not caviar.

During its 25 years of existence, important work has been carried out to develop the caviar production capacity and to make traceability a priority for the company: 4 tons are produced 2 years later.
